Snups - snickers peanut butter cups

This is what you get when you cross a Snickers with a Peanut Butter cup!

Ingredients

  • BASE
  • 1/2 cup dried dates
  • 1 1/2 cups almond meal
  • 2 tbs almond butter
  • 1 tsp cinnamon
  • Pinch salt
  • CARAMEL
  • 3/4-1 cup dried dates
  • 1/4 cup peanut butter
  • 1 1/4 cups sweet potato (pre-steamed)
  • 1 tsp cinnamon
  • Pinch salt
  • 1/2 cup dry roasted peanuts
  • CHOCOLATE TOP
  • 170g dairy free chocolate (I used Sweet William)

Peel and steam sweet potato. Save peelings in freezer to make veg broth.

Meanwhile start on the BASE by adding dates to blender and blitzing until it forms a ball.

Add remaining base ingredients and blitz until well combined. Mixture should stick together when pressing between fingers.

Press firmly into pie tray or muffin pans (12 larger or 24 mini) and put in the freezer.

Next start on the CARAMEL by blitzing dates until it formed a ball.

Add remaining ingredients except dry roasted peanuts and blitz until a smooth caramel colour and well mixed. It should be thick

Taste and add more dates for sweetness if needed.

Spread caramel layer onto the base. Slightly wet your fingers with warm water to help mould into the right shape if needed.

Sprinkle whole dry roasted peanuts over caramel and push into caramel mixture a little so that itโ€™s at the same height as the rest of the caramel layer. This ensures the chocolate will be flush with caramel layer. Put tray back in freezer.

Add chocolate to saucepan and turn to low heat. Stir until melted.

Pour melted chocolate over caramel layer and put in the fridge to set.

Keep in the fridge or freezer (to last longer).

Notes

You could get away with only 100g chocolate if you needed to.
