Ingredients

  • 1/3 cup pepitas
  • 1/3 cup almonds
  • 120g dates
  • 1/4 cup plant based milk
  • 2/3 cup buckini
  • 2 cups rice puffs
  • Himalayan salt

Instructions

Soak dates in water for at least 10mins.

Pre-heat oven to 160C or 320F.

Blitz almonds and pepitas for about 10 secs or until desired chunky size pieces for granola. Add to a bowl.

Add rice puffs and buckini to that bowl.

Drain dates and add to high speed blender with milk and a pinch salt. Blitz until it looks like a caramel paste. Taste and add more salt if desired.

Add date paste to bowl and mix in with other ingredients until all pieces are covered.

Spread out on a tray and put in the oven for 15mins or until starts browning. I have found that once it starts to smell delicious it needs about 2-3mins more.

All to cool and store in an air tight jar or container.
