Ingredients

  • 1 medium sweet potato
  • 2 medium white potato
  • 100g black beans (1/2 tin)
  • Big handful spinach
  • 1 tomato (diced)
  • 1/4-1/2 avocado
  • 1/2 lime (freshly squeezed)
  • Salt & pepper
  • Olive oil spray

Instructions

Pre-heat oven to 200C or 390F.

Cut up potatoes into chips. White potato chips should be cut thicker than sweet so they are cooked at the same time.

Lightly spray chips with olive oil. Cook for 35 minutes.

When 5mins left, add beans and spinach to bowl. Microwave for 20 seconds.

Mash avocado and add it and remaining ingredients (lime juice, tomato, salt and pepper) stir through bean and spinach mix.

Once chips are ready add to a bowl and add salt if desired. Plonk the bean mix in top. Enjoy!
